This is just a very quick post but it might help you. If you ever have a vegan friend round for a meal this is a simple, beautiful recipe you can pull out of the bag. There is the flavour of raw chocolate, the texture of velvet and the mystery of guessing what it is made from. So book mark it now.
The idea is from Green Kitchen Stories but I have played around with it a little bit. I have changed one or two ingredients just to make shopping for it simpler, but it still tastes great.
So what is in it? A ripe avocado, a ripe banana, a little peanut or almond butter, some organic cocoa powder and a dribble of maple syrup. Really simple and it tastes good too.
Vegan avocado and chocolate mousse
Serves 2
Ingredients
- 1 ripe banana
- 1 ripe avocado
- 1 tbsp nut butter such as almond, or peanut
- 2-3 tbsp organic cocoa powder (I used Green and Black)
- meagre pinch of sea salt
- 1 tbsp maple syrup
- 100g of berries i.e. raspberries, blueberries, strawberries
Method
Peel the banana and remove the avocado from its skin and place in a liquidiser. Add the coco powder and maple syrup and blitz to a smooth purée. Taste and add more maple syrup if you need to.
Variations
I am going to continue to work on this recipe because it could be developed further. I like the idea of dribbling chocolate over, maybe adding yoghurt which would disenfranchise its vegan status, and adding vanilla. But we liked it and I will definitely try it again when a banana and avocado are lingering in the fruit bowl.
